etcha: A new era of fine dining with a borderless culinary vision

Thailand’s food scene never sleeps, and just when you think you’ve seen (and tasted) it all, etcha arrives to shake things up. Located inside Chatrium Grand Bangkok, this brand-new fine dining spot is here to redefine how we experience food with its bold “borderless dining” concept. Led by Chef Giacomo Primante, this culinary mastermind seamlessly merges his European cooking techniques with his globe-trotting fine dining experiences to present a menu that throws out tradition and culinary limitations.

Using only the best seasonal and sustainable ingredients, Chef Primante’s menu is as stunning to look at as it is to devour. With two types of tasting menus available, 360° featuring 11 courses and the 180° featuring 8 courses, every dish here celebrates diverse culinary traditions that is then reimagined into something fresh and exciting.

Signatures include the Grey Pomfret with Mint and Pomegranate. Light, tangy, and incredibly refreshing, the dry-aged fish practically melts in your mouth with its soft, buttery flesh. Another fantastic dish, which is a fusion of Thai, Japanese, and French influences, is the Squid with Basil and Caviar. Here, Chef Primante transforms this delightful sea creature into “pasta” swimming in a rich Thai-style pesto. The monkfish and black sourdough is also another great highlight. And beyond the plate, etcha delivers an experience that’s just as refined whether it is the the sleek yet plush interior or the top-notch service.

However, what’s even better about dining here is their commitment to sustainability and responsible sourcing. Being the backbone of everything they do, Chef Primante spent nine months working closely with local farms and suppliers to source the finest ingredients while directly supporting Thailand’s agricultural communities.

“Every dish tells the story of its origins. Our approach is deeply rooted in respect for the environment and a commitment to preserving the integrity of each ingredient,” says the chef. With that, dining at etcha isn’t just about indulging in incredible food; it’s also about being a part of and contributing to something bigger.
