Boasting over 21 Michelin stars across his restaurants around the globe and the first chef to have three restaurants awarded three Michelin stars at the same time, most people will know that Alain Ducasse is a legend in the haute cuisine world. But the legacy of being a mentor to some of the world’s most distinguished chefs is what makes Alain Ducasse a true leader in the development of fine culinary fare and its next leading generation of chefs.

With the opening of his first-ever flagship restaurant in Thailand, Blue by Alain Ducasse nestled within ICONLUXE at ICONSIAM is shaking up the Big Mango’s culinary scene with his famed contemporary fare. Foodies with a love for French cuisine can go on a modern French culinary journey, accompanied by ICONSIAM’s dazzling riverside backdrop. The experience alone is a cause for celebration.

Helmed by Executive Chef Wilfrid Hocquet, who has been working in Michelin-starred restaurants for over 20 years (including Ducasse’s 3-Michelin-starred Le Louis XV), the kitchen at Blue delivers sophisticated flavours, evidenced in its signature dishes like the Crab Caviar, Thermidor Lobster, and Wagyu Beef with Sweetcorn and Black Truffle.

The confections curated by Executive Pastry Chef Maxou Boonthanakit are also not to be missed, and in fact, his desserts alone play a huge part in what draws diners to Blue. Maxou’s elaborate take on classic desserts like soufflé, tart tartin, and vacherin will have you wandering into the fantastical world of pastry where desserts are simply not what they seem. What is fine dining without the service that lies at the heart of the Blue experience? This is led by General Manager Alex Cufley to really bring it all together.

Embellished with grandiose decor throughout, the restaurant with its blue-gold-cream design ethos boasts a panoramic view of where the cityscape meets the river. It exudes that blend of Thai-French flair that pays respect to both the chef’s homeland and the new home of his latest restaurant. All these elements come together to really make Blue an immaculate spot for lunch, dinner, or a special occasion.
