What is SHIO?

One of our all-time favourite hotels in Samui has just brought back their celebrated sushi bar, SHIO. Due to popular demand, from today until May 9, 2025, guests can once again experience this Japanese dining gem. Located inside LANAI Bar & Lounge at Kimpton Kitalay Samui, Chef Wacharun Imarramsak, also known as Chef Run, has brought one of Bangkok’s popular sushi spots, In the Mood for Love, to this idyllic island. Here, he serves eye-catching sushi rolls with a Western twist.

The bites we loved: Chef Run presents his creative delicacies crafted with carefully sourced ingredients from Japan and around the world to ensure the highest quality and flavour. If you love eel, be sure to try the Wave Rider or Samui Song. Another excellent option is High Tide, filled with scallops, ebiko, and seared crab meat. Their fine selection of sashimi, including Chutoro, Otoro, Akami, and Hamachi, is also not to be missed.
