This fine dining restaurant offers 12 courses of Thai-Chinese-inspired dishes that serve as a portal to Chef Tan’s life and adventures. Each bite narrates a chapter of his journey, weaving together flavours and textures that reflect his deepest memories and experiences. By meticulously selecting local and seasonal ingredients, the restaurant not only showcases the best of the region but also minimises its ecological footprint. From embracing beeswax wraps to innovative waste decomposition and repurposing practices, as well as supporting smaller fishermen, GOAT demonstrates their commitment to providing exquisite cuisine along with conscious living.
The bites we loved: One of our favourites was ‘Chumphon,’ a delightful bite featuring banana prawns, sour orange, and caramelised fish sauce. Reminiscent of larb but with a subtle touch of umami sweetness, this creation was a true standout. Moving on to the main course, the flavours ‘Andaman’ harmonised seamlessly. The herby rice, cooked to perfection with a satisfying crunch, paired exquisitely well with the fish and sides, while the soul-warming broth added an extra layer of comfort and depth.
