Step into the culinary world of Chef Umberto Bombana, the renowned “King of White Truffles,” as he collaborates with Dusit Thani Bangkok to unveil Cannubi by Umberto Bombana. Inspired by Italy’s famous hills, this modern Italian fine dining restaurant has an ingredients-first philosophy that prioritises only the finest produce. Here, classic Italian cuisine meets innovative cooking techniques and local influences, creating a menu that celebrates the essence of Italy while embracing contemporary flair. Chef Susto’s, Umberto’s skillful protégé, seasonal offerings are nothing short of spectacular with each dish a unique masterpiece that delights the palate.

 

The culinary journey at Cannubi begins upstairs, where guests are welcomed into an intimate and sophisticated wine bar for a light sip before heading to the first floor for their meal. There is an impeccably trained sommelier who enhances the dining experience, expertly pairing wines to complement each dish. And as guests savour the exquisite flavours, the stunning views of the hotel’s mesmerising nine-level waterfall provide a breathtaking backdrop, making every moment a feast for the senses.

 

The bites we loved: For starters, the Langoustine Tartare served with Oscietra Caviar, Hokkaido Sea Urchin, Ponzu and Olive Oil was impeccable. Whereas for main, the M9 Short Rib and Beef Tenderloin was a perfect medium rare, stealing the show with its succulent flavours. And of course, we couldn’t miss out on the White Truffle Taglioni, a must-try from the “King of White Truffles” himself.
